Despite Cyclone Phyan alerts and heavy rain on November 11, the inauguration of the Bakery Business 2009 at World Trade Centre in Mumbai witnessed agreeable number of visitors.

The three-day tradeshow was completely dedicated to the Indian bakery industry, mainly technology and ingredients. About 60 national exhibitors from Andhra Pradesh, Gujarat, Maharashtra and Karnataka enthusiastically demonstrated their state-of-the-art products to keen national and international delegates.

R K Mohanani of Gujarat-based Shiv Shakti Essences Stores, said, "In Gujarat I heard that Bakery Business event is 100% dedicated to the bakery sector. But here I notice that the event is tilted towards technology segment of the bakery sector. I am keen to visit Bakery Business 2010 and expect to spot more bakery ingredients like bakery chemicals, cake gel, bread improver, ice cream chemicals and essence."

About the Mofpi and Fssai initiative on new regulations Mohanani said that the government should be strict right from the raw material. To control malpractices, the food ministry should draft stringent laws for producers and suppliers of raw materials.

Many leading bakery technology providers like Apple Bakery Machinery, Food Life Technology, Purovent Systems, Gofrugal Technologies, Orange Food Stuff Equipment, Naik Oven Manufacturing and Continental Equipment, were among the exhibitors.

"We are in high spirits with the response for the third Bakery Business series. The show was organised with the aim of bringing suppliers and manufacturers of the industry together. This year, we experienced that domestic bakery technology providers are eager to demonstrate their range of technology. We are sure that the Indian technology providers are established and developed to meet the domestic need of this sector," Pradeep Gopalan, director of Hospitality First, which organized the event, told F&B News..

The event also witnessed a few foreign delegates, mostly from China, studying and observing displayed bakery equipment and technological devices. "With increasing urbanisation and standard of living concepts like food safety and quality, the import and adoption of a variety of ingredients is essential, particularly for the small, unorganised bakery segment. The show gave insights to small and home-bakers on how to upgrade their activities," said Gopalan.

Concurrent to Bakery Business 2009 - Hospitality First had also organised India Bakery & Pastry Challenge (IBPC), a professional bakery and pastry display competition.

About 50 chefs from JW Marriott Juhu, Hyatt Regency, Le Meridien, Sahara Star, ITC Grand Maratha & Grand Central and Leela competed. According to the organisers, the panel of judges awarded 3 gold medals, 3 silver medals and 4 bronze medals.

Chef Vernon Coelho, chief judge, said, "IBPC had various segments - wedding cake, pastry showpiece, bakery showpiece, petit' four, and platted desserts with different criteria, dimension, portions and degree of difficulty. As it was a pastry challenge, participants used a lot of chocolate and sugar."

According to Coelho, still Indian chefs don't have international exposure to show their talent.
